Ingredients
4 servings
* 1 eggplant
* 2-3 cloves garlic, crushed
* juice of 1/2 lemon
* 1 tablespoon olive oil
* 1/2 cup tahini (sesame paste)
* 1/2 cup chopped parsley
Preparation
- Place eggplant in the oven for 30 minutes at 250° F, turning occasionally.
- Peel the eggplant and mash in a bowl with a wooden spoon. Add remaining ingredients (garlic, lemon juice, olive oil, and tahini) and mix well.
- Garnish with chopped parsley.
